Industrialized mushroom production is trending at the diversification

Global mushroom output increases year by year, of which China evidently contributes a lot. According to data statistics published by FAO, from 2000-2016, global mushroom output has been raised from 4.21 million tons to 10.79 million tons, compound annual growth rate shows at 6%. By 2016, the top five production nations have been affirmed as China, Italy, USA, Holland and Poland with the respective output proportion of 72%, 6%, 4%, 3% and 2%. In recent years, European and American countries also keep on holding stable output.
European and American countries mainly engage in intensive mushroom production while the diversification is evident in Japan and Korea. In Europe and America, the primary variety of mushroom production is Button mushroom, and it occupies above 90% of gross consumption quantity. In addition, highly specialized division of labor on strain, compost, cultivation and fruiting has been realized on mushroom production in Europe and America, meanwhile, the cost advantage resulted from scale merit has also encouraged mushroom enterprises of Europe and America to develop toward a large-scale and small-quantity direction.
Compared with the single mushroom variety in Europe and America, industrialized (Factory-mode) mushroom production covers a wide range of varieties in Japan and Korea, including Enoki, Maitake, Shimeji, Shiitake, Oyster and King oyster mushroom.
To gather the vision in China, industrialized mushroom production covers many varieties while showing low industrialization rate. According to statistics, Enoki, King oyster, Button and Hypsizigus marmoreus (Shimeji, White beech and Seafood mushroom) are four varieties that have achieved large-scale production, which respectively accounts for 43.2%, 34.9%, 9.6% and 12.4% of China’s gross industrialized mushroom production. On the basis of that, according to output data published by Mushroom Association of China, industrialization rate on Enoki, King oyster and Button mushroom has been measured and calculated as 41.3%, 50.3% and 7.3% in respective, which exceeds the average level within the industry. However, compared with 90% of rate in Japan, Europe and America, substantial development space still exists China’s mushroom industry.
