Ingredients:
2 King oyster mushrooms
A handful of leek
Half a red pepper
Condiments: Light soy sauce, salt and oil
Cooking directions:
1. Trim the leek, cut into 3-4cm segment.
2. Rinse King oyster mushrooms, cut into slices and then go blanching. After ladling out, squeeze out moisture and set aside.
3. Go seed of the red pepper and thinly slice up.
4. In a wok, add oil, when hot, drop in King oyster mushroom slices and toss about for 1-2 minutes, season with light soy sauce and mix well.
5. Let leek segments and sliced red pepper join in, go on the heat for another 2 minutes or so, scatter with a dash of salt to season. Serve and enjoy.
