Weight-reducing and toxin-eliminating eats: Stir-fried Hericium erinaceus with celery

We need:
80g Hericium erinaceus mushroom
A stick of celery
Half a red pepper
Condiments: Oil and salt

Cooking directions:
1. Soak Hericium erinaceus mushroom in cold water, and moderately change the water till clear.
2. Cut Hericium erinaceus mushroom into slices, go blanching and drain off excess moisture.
3. Go seed of the red pepper, trim the celery and remove the fibre, rinse off and coarsely slice the two ingredients up.
4. In a hot wok, add celery slices and frequently toss about for 2 minutes or so over fierce heat, then drop in Hericium erinaceus mushroom slices, red pepper slices and go on for another 3 minutes. 
5. Lightly adjust the taste with a pinch of salt and stir evenly. Serve.
