Stewed Shiitake mushroom with potato

INGREDIENTS: 
300g Shiitake mushrooms
1-2 potatoes
A suspicion of chopped onion
Half bowl of soup stock, preferably homemade
Condiments: Salt, light soy sauce, oil and sesame oil
COOKING STEPS:
1. Remove the bottom portion of Shiitake, rinse the caps off and cut into chunks.
2. Peel the potatoes, rinse and then coarsely dice up.
3. In a wok, add a drizzle of oil, when hot, drop in chopped onion and stir till fragrant, then blend with potato dices, Shiitake chunks and frequently stir over medium heat, sprinkle over half bowl of soup stock and stew for 8 minutes or so on soft flame.
4. Season with a pinch of salt, scatter with moderate light soy sauce, sesame oil and go on till evaporated, serve and enjoy.
