Sauteed Shiitake mushroom with celery and carrot

Ingredients:
1 stick of celery
1 carrot
2-3 Shiitake mushrooms
A handful of chopped shallot
A suspicion of garlic slices and bruised ginger
Condiments: Oyster sauce, sugar, salt, light soy sauce

Cooking steps:
1. Peel the carrot, roughly dice up and set aside. 
2. Remove the bottom portion of Shiitake mushroom, then rinse off and chop up.
3. Trim the fibre of celery and cut into dices.
4. In a wok, heat a drizzle of oil, drop in chopped shallot, garlic slices, bruised ginger and stir till fragrant over soft flame, then blend with carrot dices, frequently stirring over high flame till soft.
5. Let Shiitake and celery dices join in, go on the fierce heat for above 4-5 minutes. Then season to taste with a spoonful of light soy sauce, oyster sauce, scatter with a pinch of sugar and salt and mix well. Serve.
