Ingredients:
250g dried Agrocybe cylindracea
2 waternuts
Half a lotus root
A handful of chopped shallot
A pinch of salt
Cooking steps:
1. Soak dried Agrocybe cylindracea ahead of time, then go blanching and set aside.
2. Peel the waternuts and lotus root, then respectively cut into dices and slices.
3. Heat a drizzle of oil in a wok, drop in Agrocybe cylindracea and stir for 3 minutes or so, then blend with diced waternuts, lotus root slices and frequently toss about for another 2-3 minutes till well-done.
4. Lightly adjust the taste with a pinch of salt and mix evenly. Enjoy.
