Ingredients:
50g dried Pholiota nameko
2 eggs
A handful of chopped shallot
Condiments: oil and salt
Easy-to-follow directions:
1. Soak Pholiota nameko in water ahead of time, rinse to remove the impurities and then go bleaching.
2. Crack the eggs and whisk evenly.
3. Heat the oil over medium flame in a wok, pour in egg liquid and when caky, break it into chunks. After that, blend with Pholiota nameko and go on stirring for 3-5 minutes till well-done. Before serving, sprinkle with a handful of chopped shallot to garnish if you like. Enjoy.
