Ingredients:
A handful of fresh Button mushroom
Moderate chopped shallot and bruised ginger
Condiments: Salt, sugar, soy sauce and water starch
Directions:
1. Rinse Button mushrooms off, remove the fine soil with a brush. Then cut mushrooms into slices.
2. In a wok, heat the oil over medium flame, when hot, drop in bruised ginger and stir till fragrant, then blend with Button mushroom slices and toss about till juice of mushroom has been excreted.
3. Season with a pinch of sugar and salt, drizzle it with moderate soy sauce. Finally thicken it with the mixture of water and starch. Before serving, garnish with a handful of chopped shallot.
