Try it for a veggie day: Braised White beech mushroom with tofu chunks

Ingredients:
1 pack of firm tofu
1 pack of White beech mushroom
A handful of chopped shallot, bruised ginger and minced garlic
Condiments: Oil, salt, sugar, light soy sauce, oyster sauce, chicken powder and sesame oil

Cooking directions:
1. Cut tofu into triangles or chunks in accordance with your preference.
2. Cut the bottom portion of White beech mushroom and discard off, rinse mushrooms off and set aside.
3. In a wok, heat the oil, when hot, drop in tofu chunks and stir till both sides are golden, then remove into a plate.
4. Heat a drizzle of oil in the wok again, drop in moderate chopped shallot, bruised ginger, minced garlic and toss about till fragrant. Then blend with White beech mushrooms, tofu chunks and dump with half bowl of water, sprinkle with a pinch of salt, sugar and light soy sauce, bringing into a boil.
5. Lower to soft heat and go on cooking till evaporated.
6. Finally adjust the taste with a dash of chicken powder, add a drizzle of sesame oil and mix evenly. Scatter with a handful of chopped shallot for garnish if you like. Enjoy.
