Ingredients:
1 cucumber
A pack of Oyster mushroom
Moderate bruised ginger and chopped shallot
Condiments: Oil, salt and white pepper powder
Cooking steps:
1. Trim Oyster mushrooms, rinse off and tear into strips with hands, then go bleaching.
2. Peel the cucumber and thinly cut into long strips.
3. In a wok, add a drizzle of oil, when hot, drop in bruised ginger and stir till fragrant, then blend with Oyster mushrooms and toss about for above 3 minutes.
4. Combine with cucumber strips and go on the heat for 2-3 minutes.
5. Season to taste with a dash of salt, white pepper powder, scatter with a handful of chopped shallot for garnish if you like. Serve.
