Appetitive braised Shiitake mushroom with bamboo shoots

Ingredients:
1-2 bamboo shoots
3-5 fresh Shiitake mushrooms
Moderate chopped shallots
Condiments: Light soy sauce, oyster sauce, sugar, salt and oil
Cooking procedures:
1. Remove the stem of Shiitake mushroom, cut caps into thick slices or chunks according to your preference.
2. Peel the bamboo shoots, rinse and cut into dices.
3. Go bleaching of all ingredients in boiling water mixed with a dash of salt and moderate oil.
4. Heat the oil in a wok over medium-high heat, drop in chopped shallots and stir till fragrant. Then blend with Shiitake mushroom chunks, bamboo shoots dices and toss about over high heat. Sprinkle with moderate light soy sauce, oyster sauce and mix evenly.
5. Dump with a bowl of warm water and maintain the heat for 3-4 minutes. Lightly season to taste with a pinch of salt and sugar, and cook until thick.
