A new rapid method for drying mushroom is a kind of drying system at room temperature with high pressure. The details are stated as follows: fresh mushrooms are put into a closed dryer, then a dry air stream with high pressure is conveyed immediately into it, and made to circulate. Owing to air circulation, the moisture in fresh mushroom will penetrate rapidly into the air stream. Five minutes later, the high-pressure air stream is discharged suddenly and quickly, the water is simultaneously discharged with the air stream. After procedure above is repeated for 2-3 times, 98% of water in fresh mushroom will be eliminated, dried mushroom product is to be formed.
The dried mushroom products made with this method are stored in a plastic seal and don’t mildew in 2-3 years. The dried products have a strong hydrating ability, softening quickly after boiled in water for 3-4 minutes, they could be cooked for eating after addition of some proper condiments. This method can overcome the disadvantage of mushroom nutrients destruction which might occur in drying process with high temperature used in the past owing to high temperature and long time treatment.
