Nutritious Shiitake and egg soup with carrot and spinach

Ingredients:
A bundle of spinach
2 Shiitakes
2 eggs
1 carrot
Directions:
1. Rinse Shiitakes off, remove the bottom portion and discard off, then cut caps into slices and set aside.
2. Peel the carrot and coarsely dice it up.
3. Cut the root of spinach, thoroughly rinse off and remove the impurities, then cut into segments.
4. In a bowl, crack the eggs, sprinkle with a pinch of salt and whisk well.
5. In a wok, add moderate oil, once hot, drop in carrot dices, Shiitake slices and stir over high flame till soft.
6. Combine with 2 bowls of water and bring into a boil, then blend with spinach segments and lightly pour in egg liquid.
7. Adjust the taste with a dash of salt, chicken powder, and drizzle it with moderate sesame oil in accordance with your preference. Enjoy!
