Nutritious braised Enoki mushroom with tomato and eggplant

Ingredients:
A pack of Enoki mushrooms
An eggplant
A tomato
Condiments: Light soy sauce and sugar
Steps:
1. Rinse eggplant and tomato, remove the stalk and base, then coarsely dice them up.
2. Remove the root of Enoki mushroom and discard, then cut mushrooms into segments.
3. In a pot, add moderate oil, once hot, drop in eggplant dices and stir till soft, then blend with tomato dices and toss about.
4. Combine with moderate water, cover the lid and braise on medium heat till well-done.
5. Adjust the taste with a pinch of salt and sprinkle with moderate light soy sauce. Serve and enjoy.
