Level up your morning: Scrambled eggs with Straw mushroom in oyster sauce

Ingredients:
5 Straw mushrooms
1-2 eggs
Moderate chopped shallot
Condiments: Oyster sauce, oil, cooking wine, light soy sauce and sesame oil
Let’s get started: 
1. Rinse Straw mushrooms off and then slice them up.
2. Crack the eggs into a bowl, combine with moderate cooking wine and stir to bind together.
3. In a wok, add moderate oil, when hot, pour in egg liquid and heat up till caky, then break it into chunks with a shovel and remove into a plate.
4. Heat the wok again and drizzle it with moderate oil, then drop in Straw mushroom slices and saute until mushrooms are soft and have released much of their liquid. 
5. Blend with egg chunks and season to taste with moderate light soy sauce, sesame oil, oyster sauce to enhance the savoury and umami taste.
6. Before serving, sprinkle with a handful of chopped shallots.
