Cold and dressed Enoki mushrooms with cucumber

Ingredients: 
1 cucumber
1 pack of Enoki mushroom
Moderate minced garlic and chopped shallot
A cup of fresh chopped parsley
Condiments: Pepper powder, moderate sesame, oil, salt and soy sauce
Procedures:
1. Cut the root of Enoki mushroom and discard it off, then rinse mushrooms off and break into individuals before going bleaching.
2. Peel the cucumber and roughly cut it into strips, then pickle with a pinch of salt for 10 minutes or so. After that, squeeze excess moisture out.
3. In a bowl, drop in pepper powder, sesame and set aside. Heat the wok and add moderate oil, when hot, pour the oil into the bowl and let sit till fragrant. (Omit this precedure if you don’t like spicy flavor.)
4. In a container, combine with pickled cucumber strips, minced garlic, chopped shallot, then let Enoki mushrooms join in and season to taste with moderate soy sauce, sprinkle with previously-prepared oil of pepper and sesame and mix evenly with all ingredients.
5. Finally garnish with additional fresh parsley, if you like.
