Stir-fried Seafood mushrooms with wax gourd and ham

Ingredients:
A pack of Seafood mushrooms
A chunk of ham
Half a wax gourd
A handful of chopped shallots and minced garlic
Condiments: Salt, light soy sauce, chicken powder, oyster sauce and starch
Directions: 
1. Trim Seafood mushrooms and break into individuals before going bleaching.
2. Peel the wax gourd and coarsely cut it into slices. Slice ham up.
3. In a wok, add moderate oil, once hot, drop in minced garlic and stir till fragrant, then blend with wax gourd slices, Seafood mushroom slices and toss about for 3 minutes or so over fierce flame. Then season to taste with a pinch of salt and moderate light soy sauce.
4. Combine with 1 bowl of water and bring into a boil. Then let ham slices join in and adjust the taste with a spoon of oyster sauce.
5. Thicken the dish with the mixture of water and starch if you like, and sprinkle with a dash of chicken powder and chopped shallots before serving.
