Ingredients:
5 Straw mushrooms
A stick of yam
A handful of dried Black fungi
Moderate chicken stock
Condiments: Salt and starch
Cooking directions:
1. Rinse Straw mushrooms off and cut them in halves.
2. Soak dried Black fungi ahead of time, then remove the impurities and tear them into pieces.
3. To avoid the itch, firstly roast the stick of yam over the fire before peeling it, then coarsely cut it into dices or slices.
4. In a wok, add moderate oil, once hot, drop in Straw mushrooms, Black fungi, yam slices and stir over high flame for above 3-5 minutes, then blend with moderate chicken stock and bring into a boil.
5. Lightly adjust the taste with a pinch of salt, thicken the dish with the mixture of water and starch, garnish with a handful of chopped shallot if you like. Serve.
