Simple braised Shiitake mushroom with potato

INGREDIENTS: 
3-5 Shiitakes
2 potatoes
A handful of chopped shallots
Condiments: Salt, seafood sauce, soy sauce, rock candy, 
COOKING STEPS:
1. Remove the bottom portion of Shiitake, rinse the caps off and cut them into chunks.
2. Peel the potatoes, rinse and then coarsely dice them up.
3. In a wok, add moderate oil, when hot, drop in Shiitake chunks and stir till fragrant over medium heat, then blend with potato dices, sprinkle with a teaspoon of soy sauce, seafood sauce and dump with moderate boiling water, bring all ingredients into a boil.
4. Lower to soft flame, scatter with moderate rock candies, a dash of salt and maintain the flame till evaporated.
5. Finally garnish with a handful of chopped shallots, serve and enjoy.
