Brain-boosting fungus recipe: Stir-fried Nameko with vegetables and cashew nuts

INGREDIENTS: 
A cucumber
A carrot
A bowl of cashew nuts
Moderate minced garlic
Condiments: Oyster sauce, salt, light soy sauce, pepper powder, sesame oil
INSTRUCTIONS:
1. Cut the root of Nameko, rinse mushrooms off and put aside.
2. Peel the carrot and cucumber, rinse and then roughly cut them into slices.
3. In a wok with moderate oil, drop in cashew nuts and stir till pale yellow on low flame, then remove them out of the wok.
4. Drizzle with moderate oil, add minced garlic and fry till fragrant. Then combine with Nameko, cucumber and carrot slices and maintain the flame for 5 minutes till well-done.
5. Season to taste with a pinch of pepper powder, salt, scatter with moderate oyster sauce, light soy sauce and mix well.
6. Sprinkle with fried cashew nuts and drops of sesame oil if you like. Enjoy.
