Healthy supper: Fried Shiitake slices with egg and carrot

Ingredients: 
2 eggs
4-5 dried Shiitakes
1 carrot
A handful of chopped shallots
Condiments: Salt and sugar
Steps:
1. Break eggs into a bowl, peel the carrot and slice it up.
2. Soak dried Shiitakes, then get rid of the base and cut caps into slices. 
3. In a wok, add moderate oil, once hot, pour in egg liquid and stir till caky, then break it into chunks and remove them out.
4. Heat the wok again, drizzle with a little oil, then add carrot slices, Shiitake slices and stir till soft. After that, combine with egg chunks and season with a pinch of salt.
5. Garnish with a handful of chopped shallots. Enjoy.
