Ingredients:
A or half a Black chicken
A handful of White beech mushrooms
Moderate shallot, roughly chopped
A chunk of ginger, finely sliced
A pinch of salt
Cooking steps:
1. Gut the chicken and then chop it into chunks, rinse and keep them aside.
2. In an electric cooker, combine with ginger slices, chopped shallot, chicken chunks, then dump with enough water and cook for above 2 hours.
3. Cut the root of White beech mushrooms, rinse and then break them up.
4. After the soup has been cooked for 40 minutes or so, drop in White beech mushrooms and continue for at least 20 minutes.
5. Lightly sprinkle with a pinch of salt and garnish with a handful of chopped shallot. Enjoy.
