Main ingredients:
2 eggplants
1 King oyster mushroom
Auxiliary ingredients:
A tomato
A handful of chopped onions
Condiments: Oil, salt, chicken powder, soy sauce, minced garlic+
Directions:
1. Peel the eggplants, cut them into roll-cuts and soak in a bowl of saline water, then put them in a microwave oven and heat for minutes till soft.
2. Remove both sides of King oyster mushroom and then cut them into chunks.
3. Peel the tomato and then chop it into chunks.
4. In a skillet, dump with moderate oil, once hot, drop in minced garlic and fry over high flame till fragrant, then add tomato chunks, King oyster mushroom chunks and fry on medium-high heat, sprinkle with moderate soy sauce.
5. drop in eggplant roll-cuts, braise for about 2-3 minutes, then season with a dash of salt and chicken powder.
6. Finally garnish with a handful of chopped onion on top.
