Ingredients:
A black-bone chicken
A handful of Bamboo fungi, red dates and medlars
Moderate ginger slices and onion segments
Procedures:
1. Soak Bamboo fungi in light saline water for 30 minutes or so, then remove them out and get rid of head part.
2. Rinse the chicken and chop it into chunks, then put them into warm water, sprinkle with moderate cooking wine and bring it into a boil.
3. When boiling, ladle them out and rinse in cold water to remove the foams.
4. In a marmite, pour in sufficient water, then drop in chicken chunks, Bamboo fungi, red dates, medlars, ginger slices, onion segments and bring into a boil, then turn into gentle heat and stew for 1 hour or so till well-done.
5. Season with a pinch of salt before serving.
