Summer refreshing recipe: Cold cucumber with Enoki mushroom and Black fungus

Ingredients:
A handful of Enoki mushrooms and Black fungi
A cucumber and tomato
A red pepper
Chopped green onion
Condiments: sesame oil, vinegar, pepper oil, salt
Let’s start: 
1. Trim Enoki mushrooms, rinse, break into clumps and keep aside.
2. Soak Black fungi and then cut into thin slices.
3. Rinse cucumber, red pepper and then roughly slice.
4. Bleach all the ingredients and then set aside.
5. In a bowl, combine with all ingredients, sprinkle with chopped green onion, season with moderate pepper oil, salt, sesame oil, vinegar according to your personal preference and finally stir well. Serve and enjoy the dish in hot summer with your family members.
