Recipe: fried Shiitake with Chinese yam

Ingredients: 
Dried Shiitakes, Chinese yam, red dates, oil, light soy sauce, cooking wine, Chinese prickly ash, minced hot peppers, bruised ginger, chopped onion, water starch, sesame oil
Cooking method:
1. Soak dried Shiitakes, remove the bottom roots, wash and then steam for 30 minutes. (Reserve the soaking liquid of Shiitake)
2. Cut each Shiitake into half, pare Chinese yam, cut into pieces, wash red dates and blanch for a little while.
3. In a pot, dump with moderate oil, drop in Chinese yam pieces, Shiitake chunks, red dates and fry for a moment, then spoon out and drain excessive oil.
4. Combine with bruised ginger, chopped onion and fry with all ingredients.
5. Pour in the soaking liquid of Shiitake, season with moderate light soy sauce, cooking wine, sugar, salt and finally bring into a boil.
6. Thicken the dish with the mixture of starch and water, finally drizzle with sesame oil if you like. Serve.
