The preservation techniques of Shiitake

There are various methods on Shiitake preservation such as quick-freeze, refrigeration, chemical way, air-adjusted, microwave and others.
1.Dehydration: Stop spraying water 10 hours before you pick Shiitakes, then pick them in seventh or eighth-maturity, carefully select superior quality, remove any impurities, get rid of stipe base and classify in accordance with the demand of customers. After that, put Shiitakes on bamboo mat with  lamella downward, air-cure under sunlight, the superior time in autumn and spring is 3-4 hours. In summer, 1-1.5 hours is preferred under strong sunlight. Besides, the dehydration rate of dried Shiitakes is in a range of 25%-30%, which refers to that after air-curing 100kg of fresh Shiitakes, you could get 70-75kg. Under that circumstance, you feel moist when you hold mushroom stipes, and mushroom lamella present a little bit contractive, then classify, put them into paper box quantitatively, put preservative bags and then store in carton box under 0 degree.
2.Sealed package: After finely-selecting and trimming Shiitakes, you could put them in plastic bags with  lamella upward and store at 0 degree or so. Normally, this method could preserve Shiitake for 15 days or so and optimally fits for store sales.
