Ingredients: hairtails, Shiitakes, chopped green onion, cooking wine, ginger, garlic, sugar, vinegar, oil, starch
Instruction:
1. Cut hairtails into segments, pickle with ginger and cooking wine for 10 minutes so as to remove the fishy smell. Wash Shiitake, thinly slice caps and discard the stems.
2. Heat the pot, pour in moderate oil, dress hairtail segments lightly with the mixture of water and starch, finely fry, then remove from the pot when both sides turn golden.
3. Dump moderate oil into the pot, drop in chopped onion, minced garlic, Shiitake slices and stir-fry.
4. Combine with fried hairtail segments, pour in moderate water, scatter moderate sugar, salt, vinegar and braise for 20 minutes. Serve.
