Ingredients: King oyster mushrooms, potatoes, vegetable oil, onion, ginger, garlic,
Condiments: soy sauce, oyster sauce, starch, salt
Cooking method:
1. Peel the potatoes, cut into 0.5cm thickness of slices, soak in water to remove the starch element, then ladle out and drain off excessive water.
2. Wash King oyster mushrooms, thinly cut into pieces.
3. In a bowl, prepare a sauce with starch, soy sauce, salt, a half bowl of water.
4. Heat the pot, dump with moderate water and bring into a boil, drop in King oyster mushroom pieces and blanch till soft, then spoon out and set aside.
5. Add moderate amount of oil into the pot, drop in potato slices and fry till golden, then spoon out and drain off the oil.
6. Leave some oil in the pot, drop in onion segments, bruised ginger and fry till fragrant, then let King oyster mushroom pieces join and lightly season with oyster sauce.
7. Combine with potato slices and fry evenly with all ingredients.
8. Pour in the sauce and fry till the dish becomes thick, then remove from the pot, serve and enjoy.
