Vegetarian recipe: fried Shiitake with tofu

Main ingredients: tofu dices, dried Shiitakes, green garlic, pork bone soup
Auxiliary material: oil, dark soy sauce, cooking wine, chopped green onion, bruised ginger, minced garlic, anise condiment, cassia, pepper 
Cooking method:
1. Soak dried Shiitakes, remove the bottom portion and then roughly dice. 
2. Allow tofu dices sit in the hot water for a short while, then spoon out and put into cold water.
3. Cut green garlic into segments.
4. In a pot with hot oil, fry tofu dices till both sides turn light brown.
5. In a hot pot, drop in onion segments, bruised ginger, anise condiment, cassia, pepper and fry till fragrant.
6. Combine with Shiitake dices and cook on moderate heat, then season with cooking wine, pork bone soup and bring into a boil.
7. Add tofu dices, sprinkle with a dash of dark soy sauce and cook until evaporated.
8. Finally garnish with green garlic. Enjoy.
