Ingredients:
250g beef tenderloin
150g fresh Straw mushroom
A quarter spoon of salt
A quarter spoon of sugar
A spoon of soy sauce
A spoon of cooking wine
Half of egg white
A spoon of dry starch
Moderate baking soda
A spoon of oyster sauce
A spoon of light soy sauce
A spoon of sugar, ginger sliceschopped onion, onion segments, garlic slices, oil
Cooking method:
1. Wash Straw mushrooms and cut into 3cm-thick slices, cut beef tenderloin into thin slices, grasp well with salt, sugar, soy sauce, cooking wine and baking soda. Then combine with half of egg white, dry starch and pickle for one hour.
2. Prepare a bowl that filled with the mixture of oyster sauce, light soy sauce, sugar, dry starch and water.
3. Let Straw mushroom slices sit in boiling water for half minute and then ladle out and keep aside.
4. Heat the pot, drizzle with moderate oil, beef tenderloin and fry till the color changes, then spoon out.
5. Put ginger slices, garlic slices, chopped onion into the pot and fry, then drop in Straw mushroom slices, beef tenderloin and fry well, then pour in the previously-prepared mixture and fry with all ingredients. Finally turn off the heat and garnish with onion segments.
