Ingredients:
200g Monkey head mushrooms
200g tofu
10g carrot
an egg, ginger, corn flour, sweet potato flour
Condiments: salt, oil 500g, a spoon of curry powder, a spoon of oyster sauce, a spoon of sugar.
Cooking method:
1. Finely cut tofu into dices, cut carrot into slices, mince the ginger and keep aside.
2. Wash Monkey head mushrooms, soak in cold water till soft, then tear into pieces, squeeze out excessive water and pickle with the mixture of egg, oil, salt, white sugar and curry powder.
3. Firstly add corn flour and then wrap with sweet potato flour.
4. Put wrapped Monkey head mushroom in the pot with hot oil and fry till golden yellow and then ladle out.
5. Reserve some oil on the bottom of the pot, add minced ginger and fry till fragrant, tofu, carrot slices, Monkey head mushrooms, pour in oyster sauce, moderate water and braise on soft fire.
