Braised Calocybe gambosa with pork and quail eggs

Ingredients: pork, quail eggs, Calocybe gambosa, salt, ginger, onion, red pepper, oil, pepper powder, rock candy, anise, cinnamon, cooking wine
Cooking method: 
1. Put quail eggs and moderate salt into cold water, boil for another 5 minutes after boiling, ladle out and soak in cold water, finally shell quail eggs.
2. Put pork into cold water, add ginger slices, onion segments, cooking wine and allow to boil, then skim off foam and leave the water for later use.
3. Put moderate oil into the pot, fry boiled pork in soft heat till becomes yellow.
4. Add anise, red pepper, cinnamon, ginger slices, onion segments and fry. Then add moderate cooking wine and rock candy.
5. Put Calocybe gambosa and quail eggs into water hat was use for boiling pork and boil for 20 minutes.
6. Finally season with moderate salt and pepper powder, turn into high flame and stir until become thick.
