Ingredients: Pholiota nameko, egg yolk, broad bean, oil, salt, chicken powder, bruised ginger and onion, soup-stock
Cooking method:
1. Give a quick-boiling to Pholiota nameko, finely boil egg and part the egg yolk.
2. Heat the pot and add moderate oil, fry bruised ginger, onion and optionally add soup-stock.
3. Season with salt and chicken powder, then add Pholiota nameko, broad bean, egg yolk and all to braise for about 2 minutes.
